I just shared this in the latest episode. We
had been calling it the watermelon refresher, but Millie gave it a better name.
The Pink Pineapple Drink.
She approved. 🍉🍍
It became our afternoon porch drink. Refreshing, hydrating, naturally sweet, and it is easy to throw together. I am not much of a recipe follower when it comes to stuff like this, so this is definitely an eyeball it kind of recipe.
The Pink Pineapple Drink
A few generous handfuls of watermelon (fresh or frozen)
Coconut water
A splash or two of pineapple juice (add more if you like it sweeter)
Juice of 1/2 a lime
Ice (depending on how thick you want it)
Fresh mint
A pinch of flaky salt
*optional shot of tequila 😉
Blend the watermelon with coconut water until smooth. Add a few splashes of pineapple juice and taste as you go. I usually skip the ice while blending because I like it a little thinner. Then I pour it over a glass full of ice instead. If you prefer more of a smoothie, blend the ice.
We like either of these pineapple juices, Knudsen or Lakewood.
Finish with a few mint leaves from the garden, a tiny pinch of flaky salt, throw in the lime wedge. It wakes everything up and looks good.
& a little watermelon trick
The sweetest watermelons usually have a large, creamy yellow field spot. That’s where the melon rested on the ground while it ripened in the sun. The deeper the buttery yellow color, the longer it had to mature, and the sweeter it’s likely to be.
